Spicy Chicken Tomato Rice: A Taste of India

 

Ingredients:

For Chicken Tomato Curry:

  • 1 pound (450g) boneless chicken, cut into bite-sized pieces
  • 2 large tomatoes, finely chopped
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1-inch piece of ginger, minced
  • 2 green chilies, slit lengthwise (adjust to your spice preference)
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to your spice preference)
  • 1/2 teaspoon garam masala
  • Salt to taste
  • 2 tablespoons cooking oil
  • Fresh cilantro leaves for garnish (optional)

For Rice:

  • 1 cup Basmati rice
  • 2 cups water
  • Salt to taste

Instructions:

  1. Prepare the Rice:

    • Rinse the Basmati rice in cold water until the water runs clear.
    • In a large pot, add the rinsed rice, 2 cups of water, and a pinch of salt.
    • Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the grains are fluffy. Once done, remove it from heat and set aside.
  2. Prepare the Chicken Tomato Curry:

    • Heat oil in a large skillet or pan over medium heat. Add the cumin seeds and let them splutter.
    • Add the chopped onions and sauté until they turn golden brown.
  3. Add the minced garlic, ginger, and green chilies. Sauté for another 2-3 minutes until the raw smell disappears.

  4. Add the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture.

  5. Stir in the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook the spice mixture for a few minutes to enhance the flavors.

  6. Add the chicken pieces and cook until they turn white on the outside.

  7. Pour in about 1 cup of water, reduce the heat to medium-low, cover the pan, and let the chicken simmer for 15-20 minutes, or until it's cooked through. Check the chicken for doneness by cutting a piece in half; it should be white and no longer pink inside.

  8. Once the chicken is cooked, adjust the salt and spice levels according to your taste. If you want it spicier, you can add more red chili powder or green chilies.

  9. Garnish with fresh cilantro leaves (coriander) if desired.

  10. Serve the Chicken Tomato Curry over the cooked Basmati rice.
