Ingredients:
For Chicken Tomato Curry:
- 1 pound (450g) boneless chicken, cut into bite-sized pieces
- 2 large tomatoes, finely chopped
- 1 large onion, finely chopped
- 2 cloves garlic, minced
- 1-inch piece of ginger, minced
- 2 green chilies, slit lengthwise (adjust to your spice preference)
- 1/2 teaspoon turmeric powder
- 1 teaspoon cumin seeds
- 1 teaspoon coriander powder
- 1/2 teaspoon red chili powder (adjust to your spice preference)
- 1/2 teaspoon garam masala
- Salt to taste
- 2 tablespoons cooking oil
- Fresh cilantro leaves for garnish (optional)
For Rice:
- 1 cup Basmati rice
- 2 cups water
- Salt to taste
Instructions:
- Prepare the Rice: - Rinse the Basmati rice in cold water until the water runs clear.
- In a large pot, add the rinsed rice, 2 cups of water, and a pinch of salt.
- Bring it to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is cooked and the grains are fluffy. Once done, remove it from heat and set aside.
 
- Prepare the Chicken Tomato Curry: - Heat oil in a large skillet or pan over medium heat. Add the cumin seeds and let them splutter.
- Add the chopped onions and sauté until they turn golden brown.
 
- Add the minced garlic, ginger, and green chilies. Sauté for another 2-3 minutes until the raw smell disappears. 
- Add the chopped tomatoes and cook until they soften and the oil starts to separate from the mixture. 
- Stir in the turmeric powder, red chili powder, coriander powder, garam masala, and salt. Cook the spice mixture for a few minutes to enhance the flavors. 
- Add the chicken pieces and cook until they turn white on the outside. 
- Pour in about 1 cup of water, reduce the heat to medium-low, cover the pan, and let the chicken simmer for 15-20 minutes, or until it's cooked through. Check the chicken for doneness by cutting a piece in half; it should be white and no longer pink inside. 
- Once the chicken is cooked, adjust the salt and spice levels according to your taste. If you want it spicier, you can add more red chili powder or green chilies. 
- Garnish with fresh cilantro leaves (coriander) if desired. 
- Serve the Chicken Tomato Curry over the cooked Basmati rice.
